Beef chili

Winter season's best way to keep you cozy, eat chili!

Can you call winter, chili season? This is my take on chili!

Winter weather is in full swing!! Let’s warm up by making chili! This is a simple one-pot recipe!

Ingredients:

  • 1 tsp olive oil

  • 2 pounds of lean ground beef (I use 93% lean)

  • 1 finely diced white onion

  • 2 garlic cloves diced

  • 1 tsp of garlic salt

  • 5 chipotle chilis in above sauce (finely diced and make sure to remove the seeds)

  • 2 cans of dark red kidney beans (15 ounces; make sure to rinse and drain)

  • 1 can of light red kidney beans (15 ounces; rinsed and drained)

  • 2 cans of tomato sauce (15 ounces)

  • 4 Roma tomatoes diced

  • 1 can of chopped green chiles (4 ounces)

  • 1 cup of Budweiser beer

  • 1 tsp of black pepper

  • 1 tsp of salt

Directions:

  1. Cook the ground beef in a large stew pot, I am using my Dutch oven, with olive oil, garlic, diced onions, and garlic salt.

  2. Once the ground beef is completely browned transfer the ground beef to a pot.

  3. Using the same pot where we browned the meat, add tomato sauce, beans, tomatoes, chipotle chilies, green chiles, beer, beef, and seasoning. Gently stir and let it cook.

  4. Make sure to stir gently every 10 minutes for about 45 mins. Once the diced Roma tomatoes are soft serve and garnish with your favorite toppings!
