Cowboy Caviar: Easy Summer Dip

Summer time is here and so are cookouts! If you planning on attending cookouts and want to make an easy and delicious recipe, this is it. Cowboy Caviar is a simple and delicious dip that is ready in about 30 minutes. Let’s make some Cowboy Caviar!

Ingredients:

1 Purple onion, diced
3 Roma tomatoes, diced
1 Bell pepper (any color), diced and remove the seeds
2 Jalapeños, diced and remove the seeds
1 can of diced green chiles
1 can (14 oz) black beans, rinsed
1 can (14 oz) black eyed peas, rinsed
1 cup of lime juice*
1 avocado, diced
Cilantro, minced
1/4 cup Italian dressing
Salt and black pepper to taste

Steps:

Start by cleaning all your fresh produce and dicing everything. Then I rinsed the beans and black eyed peas and placed them in the bowl with the other ingredients. Once all my ingredients are in the bowl I poured the lime juice and dressing over the ingredients and added salt and black pepper.

You can eat this with tortilla chips, chips, or even in burgers! I really enjoy topping this on my burgers!

* I prefer freshly squeezed lime juice.
